Cooking in Sweatpants is the Best Thing Ever.

I have a love/hate relationship with Sundays. I am so happy to have a quiet house. The kids are always with their dad and my husband (known and Mr. J) and I usually sleep in, do the New York Times crossword (ok that is me) and catch up on house stuff...and Netflix. I am always kid of tired from running on all cylinders all week-working full-time, running my health and nutrition business, taking the kids to and fro, all the stuff we ALL do ALLTHETIME. I am not special. I am a working mom with a husband and kids and dogs and a house just trying to do the best I can and live a good life.

I started doing meal prep on Sundays not because I have an inner desire to be a supermom. I hate supermom. I am more drinkstoomuchwine mom. I started because I was spending too much money eating CRAP ON A STICK. (Is that a thing?) So at the beginning of the year I made a commitment to turning things around. I started things like I always do :full speed ahead like a maniac. And I am proud to say I have stuck with it. It's a way of life now! (Sorry about the exclamation points. I *may* have gone overboard with the espresso machine.

Anyhoo I love roasted veggies for lunch. I eat them with a serving of protein. I have gotten used to eating the same thing daily and I have to say, even me, the crazy Aquarian daredevil, likes the routine. If you are doing the 21 day fix, it's a green, a red and a tsp.
