I must be on a lamb kick. I swear it's my 10 year old; she has a think for it lately and begged me to make this recipe again. I get burned out on chicken very easily and have to limit my intake or I may never eat it again.
This recipe is inspired by Kibbeh, which is a Middle Eastern meat patty thing that is super good. Usually it's made with bulgar but I prefer couscous so there. This is a great recipe for a crowd and can easily be doubled. The kids and Mr. J had theirs on whole wheat slider buns. I shoved mine in a flax pita because it was there. I served it with roasted kale and a greek yogurt sauce. If you think you don't like lamb, try again. These are sooo good.
Ingredients:
1 lb ground lamb (lean)-you could use any meat lamb is just middle eastern-y1.5 cups cooked whole wheat couscous
1 tbsp cumin
1/2 tsp cinnamon pinch allspice
1 onion, put in the food processor (you can chop it, again, fussy onion eaters in my house)
1/2 tsp black pepper salt to taste
Directions:
Combine everything in a bowl. Shape into 12 equal balls, then flatten on a tray sprayed with non-stick stuff. Bake at 400 for 20 minutes. Eat.They are super yummy with smoked mozzarella as well. Each slider is 1/3 red, 1/4 yellow and lots of yum if you are following the 21 day fix.
