Skinny Elvis Overnight Oats
Also known as peanut butter banana with chocolate and no bacon because bacon in oatmeal is gross.Elvis Presley was famous for many things, one of which was an affinity he had for peanut putter sandwiches with banana and bacon. Let me preface this by saying I grew up in a Beatles house, not an Elvis one, so anything I know about the King is information I acquired as an adult. My introduction to Mr. Presley's food preferences happened about 8 or so years ago when I lived in Portland. Cupcakes were the hot new desert item and I went one day to check out the newest spot, Saint Cupcake. When I arrived I immediately wanted everything (perhaps how I ended up finding my way to the 21 day fix!) They had this cupcake I simply could not turn down....the Fat Elvis. Decadent banana cake, studded with chocolate chips, topped with rich peanut butter fudge icing, and garnished with a crispy banana chip.
The Shit is the BOMB
The term THE BOMB was invented for just this reason. All three of my favorite flavors combined into one amazeballs bite.Fast forward to today and although I no longer indulge in quite the same way I used to, I am obsessed with something new: overnight oats. I have made them in a zillion ways: pomegranate vanilla (not my favorite), blueberry flax, apple cinnamon, pumpkin spice latte...you name it I do it. So it seemed only fair to branch out to decadence...but in a healthy way.
I present to you, Skinny Elvis Overnight Oats, vegan, delicious, perfection in a mason jar. Yes, they are that good.
Ingredients (per mason jar)
1/2 cup dry rolled oats (not quick)
1/2 cup unsweetened almond milk
1/2 cup or less water-depends on how "wet" you like your oats. I eat them cold and prefer them like cereal.
1 tsp Trader Joes Super Seed and Ancient Grain Blend ( or flax or chia or hemp or whatever crazy hippie thing you like in your oats.
1 tsp cocoa powder (unsweetened, the kind you use for baking)
1 tbsp PB fit (powdered peanut butter, all the flavor none of the fat)
1/2 sliced banana
Mix the shit up. Put a lid on it. When you are about to eat it, add the banana otherwise it will be all mushy and gross. I make 5 on Sunday nights and eat them during the work week. Serve hot or cold.
