Chocolate Pumpkin Protein Muffins...Grain/Gluten Free!

I make the following every weekend:

Time for a nap.

Time for DVR catch-up with my cute husband.

Soup (when it's butt-ass cold out, that is).

A plan to clean which never gets done.

And muffins. Always muffins.

I used to make oatmeal every weekend for the week but one day I took a bite and was like, nah, never again. So now I make muffins.

My older peanut is gluten free so I make them so she can eat them. She is a really healthy eater and likes to have things she can grab in the morning or after school while doing homework. These are our favorite these days. They taste like they are naughty but really they are good for you and super easy.

Makes 24.

Ingredients:

2 ripe bananas
4 eggs
1/2 cup pureed pumpkin
2 TBSP almond butter
4 scoops shakeology
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 TBSP  raw cacao powder
1 TBSP chia seeds
5 packets stevia (can use 1/4 c honey, but I don't love honey or the sugar)

1. Preheat oven to 375. Line 2 muffin tins with paper liners and spray with non-stick spray of your choosing (I use coconut oil spray)
2. Put first 4 ingredients in a bowl. Puree with an immersion blender (or a regular blender, or a nutribullet)
3. Add in the rest of the ingredients. Mix well.
4. Divide. Bake for 20 minutes. Call me to thank me.

Healthy Brownie Batter...21 Day Fix Approved!

I love chocolate. I love it so much I get angry at people when they order vanilla ice cream. I think it should be illegal.

I have been experimenting over the years with healthy desert treats and these are my favorites. When I am hungry and need a treat and nothing else sounds right, these blow it out of the park.
There are a zillion different combinations and I encourage you to get creative!

Option 1- half mashed banana, 1/2 cup almond milk and full scoop chocolate Shakeology*. (1 red, 1/2 purple)
Option 2- half mashed banana, 1/4 cup mashed avocado, 1/3 almond milk and full scoop chocolate Shakeology. (1 red, 1/2 purple, 1 blue)
Option 3- half mashed banana, half mashed avocado, 1/3 cup almond milk, 1/3 cup plain Greek yogurt and chocolate Shakeology. (As shown in pic) (two servings, each is 1/4 purple, 2/3 red, 1 blue)
Option 4- whole banana with just the chocolate Shakeology, 2 TBSP PB2 , and 1/4 cup unsweetened almond milk. (1 purple, 1 red, 2 tsp)



Of course when you do the avocado/plain Greek yogurt it's SUPER filling and dense as you are adding all that protein and healthy fat to the amount you're already getting from the chocolate shake.

Have fun with it!
Mix, mash, grind, smash and then be sure to devour it. Just be sure you mash the banana and avocado before adding the milk and power, it's much easier that way.

*I have no idea if this works with any other powder (like a chocolate protein powder because I simply have not tried it :)

21 Day Fix Approved Peanut Butter Cups!

I don't know about you but I need chocolate. Like healthy clean eating is all good until someone tries to take my desert away.

So here is an amazing alternative to my absolute favorite Halloween candy of all time. Amazing Homemade Shakeology Peanut Butter Cups

WHAT YOU WILL NEED (this will make 8 peanut butter cups)

4 tablespoons of coconut oil

8 tablespoons of chocolate shakeology

4 teaspoons of natural peanut butter

Place 2 tablespoons of coconut oil in a microwave safe bowl. Microwave for 30 seconds until the coconut oil is liquefied.

Stir in 4 tablespoons of chocolate shakeology. Divide the chocolate mixture evenly between 8 spots in a mini muffin tin. Place in the freezer for 5 minutes.

Pull the muffin tray out of the freezer. Place a half a teaspoon of peanut butter on top of each chocolate disk. Spread the peanut butter evenly over the hardened chocolate with a knife.

Melt the remaining 2 tablespoons of coconut oil in the microwave. Stir in the remaining 4 tablespoons of chocolate shakeology in. Use this to pour on top of the peanut butter layer.

**You will want to do this in 2 batches so it doesn’t harden up on you while the first layer of chocolate is hardening in the freezer.

Place the muffin tin back in the freezer and leave it in there for at least 30 minutes.

The chocolate cups will slide easily out of the tin. Keep the cups stored in the fridge or freezer for the best consistency!

***One packet/scoop is a little more than 5 TBSP!

Reasons to Drink Water...and a Free Challenge!

I LOVE WATER. Like I really do. I drink a shit ton. (Is shit ton a word, or is it two?) I like it plain, with fruit, with energize mixed in. And don't get me started on seltzer. I freaking love seltzer. You have not lived if you haven't tasted it with grapefruit.

My skin gets commented on often lately, and not for being the zit-monger I once was. I have been on every rx pimple medicine known to mankind and nothing ever worked. I literally have dermatological PTSD. And then I started drinking water. I can't lie I also eat better, drink Shakeology and exercise.

1. Drinking water helps maintain the balance of fluids in your body. Your body is composed of about 60% water. The functions of these bodily fluids include digestion, absorption, circulation, creation of saliva, transportation of nutrients, and maintenance of body temperature.

2. Water can help control your calories. For years, dieters have been drinking lots of water as a weight loss strategy. While water doesn't have any magical effect on weight loss, substituting it for higher calorie beverages can certainly help. And many people confuse thirst for hunger. If I am hungry and I don't think it's time to eat, I will have a cup of green tea or a seltzer and see if I truly am hungry.

3. Water can help energize your guns...I mean muscles. Cells that don't maintain their balance of fluids and electrolytes shrivel, which can result in muscle fatigue. This means you won't unction as well or be able to push as hard. Drinking enough fluids is important when exercising. Follow the American College of Sports Medicine guidelines for fluid intake before and during physical activity. These guidelines recommend that people drink about 17 ounces of fluid about two hours before exercise. During exercise, they recommend that people start drinking fluids early, and drink them at regular intervals to replace fluids lost by sweating.

4. It makes you skin look better! Look, you skin is made up of, among other things, water. When you don't drink enough you skin looks dull and your pores appear bigger. Who wants that? Plus the more open your pores are, the more bacteria that gets in...and you don't want that.

5. Water helps your kidneys. Body fluids transport waste products in and out of cells. In basic terms-you need water to make pee, and that's what gets rid of your inside junk. When you're getting enough fluids, your urine flows freely, is light in color and free of odor. Am I the only one who stares at the color of their pee?

Blue Cross Blue Shield and a Shakeolgy Benefit!

Depending on what kind of health insurance you have, I may have some GREAT news for you!! If you have a Blue Cross Blue Shield insurance plan that provides you with a Wellness Card, you may be able to use your Wellness Card for your Shakeology!

If you were given a Wellness Card, but are not sure what exactly it's good for, it's actually super awesome. Essentially it's a $250 pre-loaded credit card to be used on things that promote wellness, and not on medical expenses (or other expenses that have nothing to do with your health at all.) You can use it on complimentary therapies (acupuncture, nutrition, etc)...and it also covers Shakeology which is (cue my favorite word) AMAZEBALLS.

Chocolate Pumpkin Protein Pancakes

Do you ever have those days you wake up STARVING? Yeah, me too. And today was that day. I was literally on the verge of eating my child if I didn't get food into my mouth soon. And since I try not to have my life resemble Silence of the Lambs, I decided to make something.

Breakfast if often a struggle for me as eating eggs kind of grosses me out. I decided to experiment with healthified pancakes and it was a home run! Plus, now I am not hangry anymore, and that's for the benefit of society at large.

Ingredients:

1/4 cup oats

2 eggs

1 tsp baking powder

2 TBSP almond milk (or whatever white stuff you use)

1/2 cup pureed pumpkin

1 tsp vanilla

pinch Himalayan salt

one scoop chocolate Shakeology

Directions:

Mix everything together in a bowl.

Use an immersion blender (or any other blender) and mix until it is combined and looks like chocolate pudding.

Coat a pan with coconut oil cooking spray (Trader Joe's has a great one, but there are others as well). Put on medium heat and wait until pan is hot. Pour pancake batter in 1/4 cup at a time and cook about 3 minutes per side.

Serve with sliced fruit or whatever the hell you find appealing. Mmmmmm berries. Enjoy. Keep the grabby paws of your children away...they are too good! Serves two; each serving is 1 red and 1/2 yellow if you are following the 21 Day Fix.
